Frozen Watermelon Pops šŸ‰šŸ‰šŸ‰

Because EVERYTHING is just better when served on a stick šŸ˜…

These are REALLY FUN for Summertime entertaining & parties.

Make a bunch of these watermelon pops (freeze SOLID 6 hours), then set them out on a large serving tray with a big bowl of dry ice underneath.

You’ll receive lots of compliments on your creativity and you’ll actually get to enjoy your friends since some of the work is already done.

My favorite way to entertain: EASY

Hear me out: YES it’s ridiculously simple. Hardly a “recipe” BUT I had NEVER thought of this idea when my kids were just little tykes ( all six are teens & young adults now) and wanted popsicles all day long on hot summer days. Had I known about these, I’d have offered these throughout the day and felt pretty darn good about the extra nutrition boost as opposed to the processed sugar stuff I was oven serving.

So for this reason, I’m sharing this idea today with you all!

I LOVE frozen fruit myself… I’m keeping the freezer stocked with these frozen watermelon pops & frozen grapes as a special treat to enjoy after working in the yard throughout the summer.

šŸ’¦Hereā€™s a fun fact: watermelon is 92% water ā€“ which means it can help keep you hydrated AND feeling full between meals. It also can aid in digestion.

šŸ‰ Its high water content means itā€™s lower in calories ā€“ but even so, it packs some surprising nutrition. In addition to containing vitamin C, it has carotenoids that convert to vitamin A, as well as lycopene, which has a long list of potential health benefits.

šŸ‘€ Lycopene has been shown to be protective against certain cancers, heart disease, and age-related vision loss.

šŸ¤— Here are some ways to get more watermelon in your diet: add it to drinks, salads, and smoothies, or just enjoy it as a snack (like this one)!

šŸ™‹ā€ā™€ļøRaise your hand if you LOVE watermelon!! When was the last time you had some?

12-15 pops

Ingredients:

  • Half of a seedless watermelon
  • Popsicle sticks

Optional:

  • serve with fresh lime wedges and sea salt

Instructions:

Place your watermelon half cut side down on your clean chopping board. Cut into 1- inch-thick half moon slices as shown in the video.

Take a half moon and cut it into 3-4 triangular wedge shapes. Repeat with the remaining slices of watermelon.

Carefully insert a popsicle stick into the rind of each watermelon wedge.

Spread the pops out on a parchment paper-lined cookie sheet, making sure that theyā€™re not touching.

Gently pat the top of the slices with a paper towel to absorb any excess moisture.

Freeze for 4-6 hours, until frozen through.

Serve immediately after freezing.

Note: they donā€™t hold well in the freezer for very long as they start to develop freezer burn and become very icy. Make what you’ll use that day.
