High Energy Snack Box

A big request this back-to-school (back to the office) season is a cold snack or lunch idea to tuck into backpacks and purses that’ll stay good for a few hours until hunger hits.

These types of things are super convenient when there’s no kitchen available to heat things up.

This snack box is packed with healthy fats and makes for a great snack for someone who is very active during the day.

Healthy fats are satisfying and supportive between larger meals.

You can always double up the recipes for larger appetites or use our lunch box ideas as snacks or post-workout meals.

Have fun with these and make them your own depending on what’s in season and what you have on hand.

For 1 snack box you’ll need:

  • 6 high energy balls

  • a handful of fresh berries or fruit/veggie of choice

  • a small handful of raw almonds or other nuts

High Energy Ball Recipe

makes 18 balls

Ingredients:

  • 3 oz raw pecans

  • 3 oz Medjool dates, pitted

  • 1 Tbsp ground flaxseed

  • 1 Tbsp cacao powder

  • 1 Tbsp raw honey

  • 2 Tbsp peanut or almond butter

  • ½ cup shredded unsweetened

  • coconut (“Let’s do Organic” brand tastes best)

Instructions:

In a food processor, add the pecans, Medjool dates, ground flaxseed, cacao powder, honey, and peanut or almond butter.

Process for 2-3 minutes, or until the mixture is well combined and sticky.

To form your energy balls, take about 2 teaspoons of mixture and shape each one with your clean hands.

Then, roll each ball in shredded coconut.

To store longer-term, refrigerate for about a week or freeze for 2 months.
