Blueberry Lemon Power Bites 🫐🍋

These lil’ power bites are a refreshing spring + summer version of our favorite homemade snack – the energy ball!

Bright lemon flavor combined with dried blueberries reminiscent of a summertime cobbler or pie.

Keep a fresh batch in the fridge and watch your family reach for these healthy homemade snacks all week long!

No-bake, and less than 10 minutes of hands-on time to make! This is a fun recipe to make with the kids. Kids are more likely to eat something when they’ve helped to make it.

Perfect for a quick after-school snack or after-workout energy boost!

Blueberry Lemon Power Bites are an EXCELLENT nutrient-packed treat for children and growing teenagers (so long as they don’t have any nut allergies – and if they do, then try using sunflower seeds instead of cashews)

Nuts naturally contain healthy fat, protein, and antioxidants. So besides being an EXCELLENT healthy snack choice, this combination actually helps to manage cravings and overall feeling satisfied.

➡️Rachel’s Tips:

2 power bites or balls each day as a snack is a perfect serving size. I love having these on hand as my before or after-workout fuel.

🫐Note: I was able to find several dried blueberry products where blueberries were the only ingredient. No added sugar or oils.

There are also several varieties of dried blueberries available that are sweetened with apple juice instead of cane sugar, which would be my second choice if you can’t find a product without added sweetener.

➡️ Nut-Free:

Use raw sunflower seeds or tahini sesame and omit the cashews.

➡️ Texture:

These energy balls might be a little sticky and need to chill for the best results.

➡️ Serving size:

2 energy bites/balls. This recipe makes about 12.

🍯Sweetness Factor is a very personal taste preference, so you may want to use more or less pure maple syrup or raw honey, depending on YOUR family’s specific taste preferences.

Ingredients:

  • 1 cup raw cashews
  • ½ cup pitted dates
  • ¼ cup dried blueberries
  • ¾ cup old-fashioned rolled oats
  • 2 tsps vanilla or almond extract
  • 2 Tbsps raw honey or pure maple syrup
  • 1 Tbsp fresh lemon zest
  • 1 Tbsp fresh lemon juice

optional:

  • a very tiny pinch of sea salt

Instructions:

Add your cashews, dates, and dried blueberries to a food processor and process until finely chopped.

Add in the oats, vanilla, honey or maple syrup, lemon zest, lemon juice, and the teeniest pinch of sea salt if using.

Process until well combined into a thick sticky paste.

 If it’s too dry, add a teaspoon or two of warm water then process again.

Take equal spoonfuls and form small balls into your palms.

A cookie scoop works really well for this step.

These will likely be sticky and the texture will improve after refrigerating for a few hours.

Refrigerate in a sealed container for up to 1 week or freeze for a month.
