Instant Pot Cabbage with Sausage or Pepperoni

This recipe came together one evening when I needed to make something quick so I simply used up several ingredients I had in my kitchen. I love when this happens because it was simple and it turned out SO GOOD!

Cabbage is often on sale – so I try to grab some whenever it is to incorporate throughout our weekly meals. I happened to have this high-quality pepperoni that I needed to use, which became the “fun” part of this meal for my older kids. Any type of sausage works really well here if you don’t want to use pepperoni.

I think you’ll be surprised how truly tasty this one turns out – especially considering we used minimal ingredients and only needed a few minutes to prep!

I’ve been relying on my instant pot more frequently these days…this, after many years of leaning mostly on my crockpot/slow cooker.

While I still adore my crockpot and the slow cooker method, I must admit that being able to throw everything in the Instant Pot and have a delicious meal just a few minutes later (without planning earlier in the day) is pretty amazing and has been very convenient when I’m just not as organized earlier in the day.

Instant Pot is the Queen of last-minute meals that tastes as if it cooked for hours.

Many people don’t know what a powerhouse of a food cabbage really is.

It’s very LOW in calories, HIGH in nutrients and fiber. Definitely, a vegetable that we could all be eating more of.

In terms of price per cup, a report by the Department of Agriculture (USDA) has shown cabbage to be the second most economical cooked vegetable in terms of price per edible cup. Yes! Grab you some next time you’re out & about!

🍅When shopping for store-bought marinara sauce:

I like to make sure the marinara has no added sugar (tomatoes naturally contain sugar, but we don’t need added sugar in the ingredients list.)

I REALLY prefer sauce in glass jars – much better flavor and no leaching from cans.

A good marinara sauce contains just a few simple ingredients such as tomatoes, garlic, and herbs. Splurge on the high-quality sauce when you can, because your dish will taste exactly like the sauce you use.

🐷What’s my take on highly processed meats such as pepperoni?

The studies are clear.

We should limit our consumption of highly processed meats due to many possible and/or proven health risks.

At my house, we consume bacon, sausage, or pepperoni about once a week or sometimes just several times per month.

They are part of our life because we do enjoy these things!

What do WE look for?!

Here’s my helpful list (and YES, it’s really hard to believe this much crap can be hidden and added to pepperoni!)

If possible, choose meats containing:

  • No antibiotics
  • No nitrates: Sodium nitrate/sodium nitrite
  • No BHA (butylated hydroxyanisole)
  • No BHT (butylated hydroxytoluene)
  • No Smoked/naturally smoked/smoke flavor
  • No Corn syrup
  • No Aspartame
  • Uncurred
  • Look for humanely-raised, pasture-raised meats whenever possible
  • Look for lower sodium

Good luck shopping! And just so you know, I personally believe that we don’t need to obsess or be ULTRA rigid with our healthy lifestyle…I believe that it’s great to be educated, but even better not to stress over every small thing!

Ingredients:

  • 1 Tbsp olive oil or avocado oil
  • 12 ozs nitrate-free uncured pepperoni or sausage, sliced
  • 1 large green cabbage
  • 1 large onion
  • 4 cloves garlic, minced
  • 1/4 cup chicken or vegetable broth
  • 1/2 cup marinara sauce
  • sea salt and ground black pepper, to taste
  • chopped fresh parsley, to garnish

Instructions:

Roughly chop the cabbage into 1-inch pieces.

Dice your onion.

Set your Instant Pot to Saute mode.

Add the oil and pepperoni/sausage and saute until it starts to lightly brown.

Add your chopped cabbage, onion, and garlic to the Instant Pot. Saute for about 5 minutes. Stir often with a wooden spoon.

Pour in the broth and the marinara sauce, then using the same wooden spoon scrape the brown bits from the bottom of the pot.

Set the lid on and secure the valve.

Turn the Instant Pot to High Pressure for 1 minute.

Once the timer is done, manually release the pressure.

Carefully open the lid and season your cabbage with sea salt and pepper if desired.

Sprinkle with freshly chopped parsley.

Serve hot.
